:Start with the ingredients:

Most of the time a sandwich or any food for that matter is like building a house. Without a strong foundation, the house will be weak. Same goes for any food. You must have a strong foundation and in this case it is ingredients.


Ingredients: Let's look at a generic sandwich: Bread, meat, cheese, veggies, some spread on it ... done.


Not quite.


Let's just look at the first main character in this foodie story - bread


Bread:

To make a better sandwich, you must have fresh bread. I know other places advertise fresh baked bread and it is. But Real bread has a crust. The firm crunchy crust has loads of texture and flavor. Flavor in bread , in my opinion, comes from creating the crust through intense heat and caramelizing the sugars in the dough.



Many "crusts" on bread in commercial shops are thin and weak. It has been so processed that there is not really a crust. It is pale and soft. The only crust you get is from it setting out or hanging in the warmer - yuck. It lacks flavor and texture to the mouth. The bread quality is the major aspect of the sandwich. Real bread has a distinctive crust. It might be tough but that is what gives the crunch and distinction to the sandwich made with an artisan style bread. I like to use Ciabatta that uses very little yeast and takes 18 - 24 to mature. It is then baked hot (500) and allowed to caramelize so the crust is golden. See the image above...look at the color. hum-drum sandwich to gourmet in 60 minutes or less.

Cooking/Baking takes time which is what people today feel they have very little of. However, if they track what they do for one week by the hour, they will be amazed at how much time they lose by doing things that do not produce value.



By reorganizing your time, you will be able to find the time you need to make your own bread or visit a bakery in your neighborhood that can increase your taste buds. Reorganize and make yourself/family better food.


next time: meats..cut them yourself. Have you ever seen a round turkey breast? Watch what they put on your sandwich....learn to say NO.
